This is how it works ..
With the presence of patrons who wish to remain at
Friends and dine or drink past closing time, we'll stay
open no matter how late. And, with a confirmed
reservation we'd be glad to stay open and wait for you too. It's no trouble at all; in fact, I would be
on the computer working on business files or relaxing at the lounge watching a film or outside with
a water pipe! It's no sacrifice, my son would be at home asleep, and if I were home I would be at
the computer any way. So, I can use your business and it would be a pleasure to stay longer; just ask.
If it's late but you are already in the area, well, stop by any way, we may be open. If you're not already in the area and it's around 10 pm, please call to make sure I am still here.
.. However, having said that, around or close to 10 PM, I often assess the situation and if no patron is present around 10 PM I may start to shut down, turn the grill off and get ready to call it a night. Otherwise, it's 10 PM to midnight or later if patrons arrived.
The nature of this small operation, keeping in mind that I am the only cook and the unique recipes that necessitate my presence at all times, allow for a marginal or reasonable flexibility rarely excercised when I have to attend to a matter beyond Friends' kitchen. In the past year, only very few times I closed about an hour or so earlier; and perhaps only twice again for an hour or so during business hours for such reason as to take my son to the dentist. I am sure you understand the influence of the sigle parent resposibilities which at times (not often at all) may conflict with business hours.
When there is such need to close for an hour during the day, I avoid our holy hours:
11 AM - 2 PM and 5-8 PM, brunch-lunch and dinner hours.
As well, if I get a call from my son's babysitter that she has to go home before 10 PM or she can't make it one evening, then I have to close earlier for my son's bed time at 9.30 PM or so. This also rarely happens, in fact only twice last year.
These are the rare exceptions. We have worked hard and established a reliable service - so, yes, basically, other than the indicated rare exceptions,
we're always open, Tuesday to Sunday inclusive!.
